The tonkotsu broth, prepared solely from pork head bones boiled over high heat, is rich and full-bodied yet finishes with a clean, refreshing taste. The charred garlic oil—crafted with a secret technique to achieve a perfectly roasted flavor—enhances the soup’s savory depth. The homemade noodles, made from stone-ground flour for an exceptional taste, contain no egg-based ingredients, ensuring they are safe for those with egg allergies. Additionally, every component is meticulously handmade, including the char siu prepared from fresh pork with a sauce passed down since the restaurant’s founding.
