Enjoying a parfait as the final act (‘shime’) after drinks or meals—a distinctive Sapporo culinary tradition called ‘Shime Parfait.’

‘Parfait Sato,’ the trailblazer of this shime parfait culture, relocated and reopened in a renewed space on April 26, 2024.

This time, we introduce the newly revamped Parfait Sato along with the pistachio confections from ‘Satodo,’ which are also attracting attention as Hokkaido souvenirs.

Various visuals are projected onto the tables using projection mapping.

The new location features a layout where the first floor houses the pistachio sweets specialty store, Satodo Honten, and the second and third floors are dedicated to Parfait Sato.

On the main floor’s third level, large tables are surrounded by low chairs, designed to be easily accessible for strollers and wheelchairs.

At night, projection mapping is cast onto the tables, displaying beautiful flowers, butterflies, goldfish swimming in a pond, and lace-like patterns.

On the second floor, you can watch the making of parfaits right before your eyes.

Counter seating where you can observe the live preparation of parfaits right in front of you.

The second floor features an approximately 12-meter-long counter in a modern Japanese-style ambiance, letting you experience the live assembly of parfaits right in front of you.

While the third floor, enhanced with impressive projection mapping, serves as an ‘entertainment floor,’ this area gives off the impression of an ‘adult floor’ where you can leisurely enjoy your parfait.

Since the second floor includes an outdoor terrace, you can enjoy your parfait in an open space while taking in the lively atmosphere of Odori.

At Parfait Sato, besides offering six classic parfaits—including ‘Salted Caramel and Pistachio’—they also serve seasonal, limited-edition parfaits made with fresh fruits.

The April limited menu ‘Sakura and Strawberry Hazelnut’ features cotton candy designed to resemble a cherry blossom tree for a striking impact!

The tartness of strawberries and the rich flavor of hazelnuts harmonize perfectly, and with textures like salt crumble, it’s a deeply indulgent treat.

The regular menu’s ‘Today’s Assorted Pistachio Sweets’ is a dessert medley featuring everything pistachio—from fresh confections to baked treats.

This menu, perfectly suited as a coffee companion, allows you to luxuriate in the sweets sold at the 1st-floor Satodo Honten.

Brewed using a nel drip—a robust coffee that pairs perfectly with parfaits.

It is said that they even offer over 20 different types of coffee cups.

The coffee, made from beans roasted at Sapporo’s popular café ‘roach roaster,’ is prepared through nel drip to deliver an authentically robust flavor.

For the lavish and maturely sweet parfaits, a dark-roasted Italian roast works beautifully, while straight beans from Guatemala or Colombia also help accentuate the depth of flavor in the parfaits.

Additionally, they offer a range of beverages including sparkling wine and whiskey.

The ‘Parfait Sato Indulgence Course,’ which combines drinks, snacks, parfait, and coffee, is also highly recommended.

They sell original sweets crafted with Hokkaido dairy products, wheat, Sato, and red beans, meticulously designed to showcase variations in texture and flavor.

There’s an abundance of adorable sweets, including cakes and monaka.

In the showcase, an array of delectable fresh confections—cakes, monaka, butter sand, and more—are displayed, all showcasing pistachios, of course.

Sato-do’s confections, sophisticated in both taste and appearance, are perfect as gifts or for special occasions, and are sure to impress.
